Easy Gluten Free Chocolate Cobbler In The Crockpot

  • Mix flour, sugar, 1/4 cup cocoa, xanthan gum, salt, 1/2 cup coconut milk, water and butter together and spread in bottom of a greased 6 or 8 quart crockpot.
  • Mix brown sugar, 1/2 cup cocoa and 3 1/2 cups coconut milk together and sprinkle on top.

Set crockpot to high and bake for 2 1/2 – 3 hours.

  • Don’t worry, the pudding ends up under the cake by the time it’s done baking.
  • Serve warm!
  • Pairs well with coconut ice cream, just sayin’. 🙂
