These muffins are a huge hit at my house. They are totally gluten-free and filled with good fats and no artificial sugar. Can’t beat that, right? Not only that, the ad-in ideas are endless! Find your favorite add-in and create your own favorite!

Coconut Muffins 1

Coconut Muffins

6 eggs

4 Tablespoons of melted Coconut Oil

1/2 Cup Honey

1/4 teaspoon salt

1/2 cup coconut flour

1/2 teaspoon baking powder

Coconut Muffins 2

Add-in Ideas

Chocolate Chips or Carob Chips

Dried fruit

Fresh fruit

Coconut mufiins 5

Stir all of the ingredients together but, make sure you add the coconut oil last.

Bake at 350 degrees for 15-17 minutes.

Makes 12 muffins.

 

Side Note: With all of the coconut you would think it had a lot of coconut taste but, it doesn’t at all.

This muffin is very dense so, it will definitely fill you up faster and without artificial sugar and added coconut this muffin makes a great gluten-free healthy treat!
