I am not cut out for this “clean eating thing.” It’s kinda hopeless, I’ve tried diets before. Yada, Yada, yada….
Yes, I know, I have been there and it’s a tough place to be BUT, let me tell you….. You CAN do this! It’s NOT hopeless and it’s NOT a diet! So, now that all of that is out-of-the-way, let’s talk….
How I Create Apple Pie That Gets the Kids Asking for MORE!My family and I were in and out of the doctor’s office A LOT, before we started Clean Eating. We were spending all of our income, it seemed, on doctor bills. We knew we had to make a change for the better. Our health was counting on it, as well as our checkbook.

One of the first things I did was find better breakfast recipes for my family and I, because we love breakfast foods. We do not always it breakfast in the morning, but we for sure always have it out for snacks, breakfast or dinner. Breakfast anytime is the way we roll. This recipe was one of my first to adapt to out healthier lifestyle and we still enjoy it until this day!

Apple Pie Quinoa Breakfast Bowl

(Gluten-Free, Vegan, Tree-Nut Allergy Free, Refined Sugar-Free)

Prep Time: 3 minutes

Cook Time: 2 minutes

Total Time: 5 minutes

Apple Pie Quinoa Breakfast Bowl, a five-minute comfort food for your body and belly! Nothing says warm and cozy like a bowl of hot cereal laced with sweet apples, cinnamon and brown sugar. This gluten-free, vegan, and refined sugar-free quinoa bowl floods your body with nutrients while warming your soul!

Ingredients
1 small or 2/3 of a medium ripe banana mashed
1/8 teaspoon sea salt
1/8 teaspoon cinnamon (more if desired)
1 teaspoon coconut palm sugar (more if desired)
1 tablespoon chopped walnuts (can be omitted or substitute pecans, we omit due to tree nut allergies)
1/4 cup apple diced (reserve remaining apple to slice on top and/or dip in cereal)
1/3 cup quinoa hot cereal flakes (I use Ancient Harvest GF)
1/2 cup cold water
3 tablespoons coconut (carton) milk to pour on top (this can be omitted or substituted with other milks)

Instructions
1) Mash banana in bowl and mix in salt (this will give it a nice buttery effect). Stir in cinnamon, coconut palm sugar and walnuts.
2) Dice apple and add to bowl. Then add quinoa to bowl and mix together. Pour water on top and gently stir together. Microwave for 2 minutes on high power. Stirring every 45 seconds – 1 minute.
3) Remove from microwave and stir.
4) Top with apple slices and remaining banana or toppings of choice.
5) Pour on coconut or hemp milk and enjoy!

Final Thoughts On Clean Eating

Today, we are a whole lot healthier and we have more money in our pockets. Our bodies’ immune systems’ can now hack the viruses and germs floating around because, we have built a better foundation for our well-being.
Clean eating is cheaper and easier than you think, I promise! It’s so simple a kid can do it! Yeah and guess what?! MY kids actually DO “do it”! We live the clean eating lifestyle together! Yes, we splurge some days and yes, we do “live” but, it can be done!
Just to show you how easy it can be, the recipe I shared above is one of my kids’  favorite breakfast recipe.
Its MEAN, CLEAN and LEAN! This recipe is what I call a triple threat! Enjoy!

Clean Eating Without Cleaning Out Your Wallet

Stock up on in-season produce.
During harvest time, the costs of in-season produce often drop due to increased availability; this just so happens to be when fruits and vegetables are at their peak in terms of both flavor and nutrition. (Woo-hoo! Double whammy!)
If you’re not sure what’s in season when, staff will usually help point you in the right direction.
Mini FYI: During summer months, organic strawberries, stone fruits (like peaches, apricots, cherries and plums) and melons are some of the best values… You can also go and check out this website to find out which fruits are in season!
