Fried Egg and Sweet Potato Hash Ingredients

  • 1/2 cup diced sweet potato
  • 1/4 cup chopped onion
  • 1/4 cup chopped spinach
  • 1/2 teaspoon coconut oil
  • 2 large eggs
  • black pepper
  • salt
  • olive oil
  • avocado oil

Instructions

  • Sauté the sweet potatoes, onions and spinach in coconut oil just until the sweet potatoes are done over medium heat.
  • Fry the eggs in the remainder of coconut oil.
  • Add Pink Himalayan Salt and Pepper.
  • Voila! Done!

  • I love adding bell peppers; green peppers or red bell pepper (both work great) to mix it up a bit.
  • If you don’t have have coconut oil on hand, olive oil and avocado oil works just as well and adds a different flavor to it.
  • Grab a fresh avocado is always welcome when I have one on hand. It is best if added after you cook all the ingredients and take it out of the hot pan.
  • I make this ahead of time when i have busy weekdays ahead. It warms up nicely in the convection oven.
