I don’t know what it is about Fall. It just has this ambience about it that makes me want to snuggle under the blanket with a cup of coffee and Gluten Free baked goods that I have made out of my kitchen. And amongst the baked goods, all of them have to have some kind of pumpkin aroma or taste. So bare with me as we go through these Fall months and I give you more and more Fall-like recipes.
So with that in mind and disclaimer out of the way let’s move on to the main attraction.
Everyone has to have a great cup of coffee in these cooler Fall months. If you are into creamer for your coffee and you like pumpkin, well then this recipe is for you and guess what, it is so easy to make!
Do-It-Yourself Healthy Pumpkin Spice Coffee Creamer
- 2 cups Canned Coconut milk (This recipe was updated with this ingredient. Last year I used Carton Coconut Milk, this year I have discovered that Canned Coconut Milk mixes so much better and it is full of good fats and nutrients. So why not, right?)
- 3 TBSP Organic Honey
- 1 TBSP Pumpkin Puree
- 1 tea cinnamon
- splash of vanilla extract
- Pour all of the ingredients into a blender or Vitamix. (Love my Vitamix, by the way. Well worth the money.)
- Blend well.
- Pour into a glass jar. I use a mason jar with a pouring spout.
- This creamer will keep in the fridge for up to 2 weeks.
And by the way, Gluten Free Pumpkin Muffins go absolutely fabulous with this recipe. You will have some pumpkin puree left over, so why not make them!
