How I Grilled

We are usually not a “Lamb Chop eaten” type of family but, on this night we gave it a try and I am so glad we did. Not only was this recipe clean but, it was also some good eaten’! It was a hit for everyone! Grilling outside wasn’t an option on this particular night so, I got out the George Forman grill and it worked just as well.

Grilled Lamb Chops

Ingredients

  • 3-4 large garlic cloves, minced
  • 4 Tbsp. olive oil
  • ½ Tbsp. whole grain mustard
  • ½ yellow onion, thinly sliced
  • ½ Tbsp. chopped fresh thyme
  • ½ Tbsp. chopped fresh rosemary leaves
  • 1 Tbsp. chopped parsley
  • 3-4 mint leaves, chopped
  • 1 ½ Tbsp. freshly squeezed lemon juice
  • ¼ Tsp. ground cumin
  • ½ Tsp. ground coriander seeds
  • ¼ Tsp. freshly ground black pepper
  • Pinch cayenne (optional)
  • 6 thick (3/4-inch) lamb shoulder chops, trimmed of excess fat

Instructions

  • In a bowl, combine all the ingredients for the marinade, except the lamb, and whisk together to form a thick paste.
  • Place the chops in a shallow glass or ceramic dish* and pour the marinade over the chops, turning to coat both sides. Cover the dish with plastic food wrap and refrigerate for at least 2 hours but preferably overnight. For easy clean up I like to use a resealable plastic food storage bag to marinade the chops.
  • When ready to cook, let the chops sit at room temperature for 20 minutes.
  • Preheat the grill to medium-high heat and brush the grill grates with some oil. Remove the chops from the marinade and sprinkle them with some salt and freshly ground black pepper.
  • Arrange the lamb chops on the grill. Do not move them for 4 to 5 minutes. Flip the chops and allow them to grill for another 5 minutes. Remove onto a plate, cover loosely with aluminum foil, and set aside to rest for 5 to 10 minutes. Please don’t skip this part. Allowing the chops to rest for few minutes will ensure that they are tender and juicy.


Some things to keep in mind when preparing this dish….

  1. DO NOT marinate in a metal container since the acidic mixture can react with the metal.
  2. This marinade will work with lamb shoulder chops, lamb rib chops and lamb loin chops.
  3. If your lamb chops are small, allow 2 chops per person.
